I am also using IE 7 instead of IE 8. Reasons:
1. I tried IE 8, I didn't see much improvement (or any new feature that really attracted me)
2. Our IT currently only supports IE 7
At the end I reinstalled IE 7. I will consider IE 8 again when I switch OS from to the GOOD OLD XP to Windows 7.
